Russian Tea Cakes (aka: Sandies)

1 c. butter
1 tsp. vanilla extract
6 Tblsp. powdered sugar
2 c. all purpose flour
1 c. chopped pecans (or other nut)
1/2 c. powdered sugar

Preheat oven to 350*

In a medium bowl, cream together butter & vanilla until smooth. Slowly add in 6 Tblsp. powdered sugar and flour. Mix on low speed until well blended. Stir in nuts. Roll dough into 1" balls and place on an ungreased cookie sheet at least 2 inches apart. Bake for 12-15 minutes or until lightly golden. Allow to cool slightly then remove to a cooling rack or other surface. Let cool completely. Once cooled, roll in powdered sugar to coat. You can do this twice if you want more of a coating on the cookies. Yields: about 3 dozen

*Store in an airtight container to prevent cookies from drying out.
