Banana Bread

2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 c. sugar
2 eggs, beaten
3 bananas, mashed
1/2 tsp. vanilla extract

Preheat oven to 350* Grease a 9"x5" bread loaf pan. Set aside. Remove skins from bananas. In a large mixing bowl place, combine all ingredients until well blended. Pour mixture into prepared loaf pan. Tap bottom of pan lightly on counter to release any air bubbles trapped inside batter. Place in preheated oven and bake for 45 minutes to an hour, or until knife inserted in center comes out clean and top is golden. Let cool in pans for about 5 minutes then remove to a wire cooling rack to completely cool.

**You can also add chocolate chipsand/or chopped nuts to the batter before pouring into bread pan if desired.
