1-lb. ground beef
1 (14-oz) can diced tomatoes
1 (10-oz) can diced tomatoes with chilies
1 (6-oz) can tomato paste
2 tsp. sugar
salt & pepper to taste
6-oz. wide egg noodles
1 c. sour cream
1 c. grated cheddar cheese
1 c. grated mozzarella cheese
1 c. grated Parmesan cheese
In a medium size skillet, brown meat until no longer pink. Drain fat. Return meat to skillet, then add in tomato products, sugar, salt & pepper. Bring to a bubble for 5 minutes. Cover & lower heat to simmer for 30 minutes.
Meanwhile, prepare noodles according to package directions. Once cooked, drain and pour into a 9x13" casserole dish. Stir sour cream into hot noodles.
Pour meat mixture over noodles & sour cream. Spread evenly. Top with cheeses. Place a cover of aluminum foil over casserole and bake in a 350* oven for 30 minutes. Remove foil and return to oven to bake for 5 more minutes or until cheese has browned slightly.
