This spice mix is used in eastern Mediterranean cooking, It varies from country to country and household to household.
1/2 c. black pepper
1-1/2 tsp. ground coriander
1-1/2 tsp. ground ginger
1-1/2 tsp. ground cloves
1/4 c. cayenne pepper
1-1/2 tsp. ground cumin
1-1/2 tsp. ground cinnamon
1-1/2 tsp. grated nutmeg
Combine all ingredients and mix well. Store in an airtight container in a cool, dry place for up to 1 year. (yields: 1 cup)
